I have a friend who really wanted to make pickles. So, last fall, he said to me, "You know, you go to a lot of farmers' markets. Get me some pickles. Get me a whole bunch of pickles. I want to make pickles out of cucumbers, of course." He didn't realize that that was not the right time of year. This is the moment for pickling. This early summer is when all kinds of great cucumbers are out there.
Now, mind you, cucumbers are so wonderful and refreshing, and we have them for a long season.
