There's always a moment in May, when I'm driving down the Gravenstein Highway, when the blossoms, the apple tree life is exploding in a way that the French would call a point uh perfectly ripe, that moment, right? And I love seeing that. Then a little while later, it starts to get really leafy and green.
And then a few weeks later, you start to see little bumps and they become the Ravensteen apples, watching that seasonal evolution, watching that movement of life is so exciting and so delicious and then soon you get the fragrance and you get the fruit.
