At the hottest time of the year, maybe in September, maybe in October, maybe in January, it's really wonderful to have the option of a cold soup. Of course, gazpacho is the first one a lot of us think of and you know that gazpacho comes with and without bread crumbs. The bread crumbs are usually added in the winter time to make it a heartier soup. And Vichy Soisse is creamy and lovely and chilled and kind of fancy. We have great potatoes here and that might work really well.
I happen to love cold cucumber soup. It's refreshing and there's still probably a few cucumbers around, although they are earlier in the summer. Um, beet borscht is from my family's history and you can't beat it. And sometimes we even make a chilled fruit soup with a little bit of yogurt on top. Savoring Sonoma, I'm Clark Wolf for KRCB.
